I checked out http://notebookingpages.com this evening and found it to be a informative site that simply describes what notebooking is.  What I got from it is that notebooking is about creating a book about what you have learned on a topic of your choosing.  You read, research, discuss, write, review, repeat.  You may use words, pictures, drawings, maps, scrapbooking ideas really the sky is the limit. 

This family uses the classical, Charlotte Mason, and Thomas Jefferson Education methods, principles and resources.  I will have to research those topics as well as find out exactly what copywork means.  I am also on the lookout for a cursive writing resource.
